Fred Sirieix is the General Manager at Galvin at Windows, the Michelin-starred restaurant on the 28th floor of the London Hilton on Park Lane. Fred co-hosted with Michel Roux jnr in the BBC2 series about service and hospitality, "Michel Roux's Service". Fred and Galvin at Windows also appeared in The Apprentice on BBC1 in spring 2012.
Head Chef Joo Won hails from Busan, South Korea. At University Joo studied industrial engineering but he soon realised this was not the path for him. To discover what his true passion was Joo started taking courses and it wasn’t until a pastry class sparked his interest that he truly fell in love.
Andrew Sicklin is the Restaurant Manager at Galvin at Windows. In 2012 Andrew made his television debut when he appeared in the “Escoffier Series” on BBC2 with Michel Roux jnr. Andrew is a dynamic and highly driven individual with a passion for the industry and service.
ASSISTANT RESTAURANT MANAGER
Emmeric Hurault is the Assistant Restaurant Manager. Born in France he studied hospitality and catering at college in Brittany. He moved to England when he was 18 and started work at The Stafford Hotel. Whilst working at the Stafford, he worked his way up to assistant Bar Manager.
As Head Sommelier, Rudina has been the last word on wine at Galvin at Windows since joining us in 2012 and her superb taste and acumen give shape and form to the extensive range of wines we keep for both the restaurant and bar.
Despite his youth, Tiago is a veteran of the top-flight bar world. Joining Galvin at Windows’ team in early 2015 direct from a senior role at The Ritz’s Rivoli Bar. He quickly not just found his feet but was the natural choice to progress to Bar Manager.
